How It's Made

Whole "Mediterranean" bergamots are crushed together with prized Califiornia grown Leccino olives in our state-of-the-art "mobile-mill", sealing the essential oils of the bergamot zest in the resulting extra virgin olive oil.

How to Use

This oil’s citrus notes are a great match for seafood. Drizzle over tuna carpaccio and raw oysters or mix with mayonnaise to make a bergamot-scented aioli to serve with "fritto misto di mare" (fried mixed seafood). It also adds a bittersweet twist to olive oil cakes and shortbread cookies.
